A quick example of this would be the additional time needed when you bring on a brand new client.  A lot of extra work will go into getting everything straightened up with brand new clients.  This could be because their previous bookkeeper didn’t know what they were doing or didn’t really care to begin with or they never had a bookkeeper, to begin with.

Realistically, 20-30 clients would probably give you full-time hours when all is said and done.
